Vegetarian Lentil Soup Recipe

Lentil soup is a hearty, nutritious and budget-friendly meal that is perfect for vegetarians and non-vegetarians alike. This recipe for vegetarian lentil soup is packed with protein, fiber, vitamins and minerals, making it a healthy and satisfying meal option.


  • 1 cup of lentils
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 stalks of celery, diced
  • 4 cups of vegetable broth
  • 1 can of diced tomatoes
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper to taste


  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté for 2-3 minutes until the onion is soft.
  2. Add the carrots and celery and sauté for an additional 3-4 minutes.
  3. Add the lentils, vegetable broth, diced tomatoes, thyme and rosemary. Bring the soup to a boil and then reduce the heat to low. Cover the pot and simmer for 20-25 minutes, or until the lentils are tender.
  4. Season the soup with salt and pepper to taste.
  5. Serve hot and enjoy!
