Ingredients:
- 1 cup of lentils
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 stalks of celery, diced
- 4 cups of vegetable broth
- 1 can of diced tomatoes
- 2 tablespoons of olive oil
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté for 2-3 minutes until the onion is soft.
