Vegan Stuffed Bell Peppers Recipe

  • 4 bell peppers
  • 1 cup of cooked rice
  • 1 can of black beans
  • 1 can of corn
  • 1 small onion, diced

  • 1 teaspoon of cumin
  • 1 teaspoon of smoked paprika
  • Salt and pepper to taste

Begin by preheating your oven to 375°F. Cut the tops off of the bell peppers and remove the seeds and membranes. In a skillet, sauté the diced onion and minced garlic in olive oil until they are soft and translucent. Add the black beans, corn, cooked rice, cumin, smoked paprika, salt, and pepper, and stir until everything is well combined.

Stuff the bell peppers with the mixture and place them in a baking dish. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are soft and the filling is heated through.
