Quinoa and Black Bean Salad Recipe

Quinoa is a superfood that is packed with protein, fiber, and a variety of vitamins and minerals. When combined with black beans, which are also a great source of protein and fiber, you have a dish that is not only delicious but also highly nutritious. This Quinoa and Black Bean Salad recipe is easy to make and perfect for a quick lunch or dinner.

Ingredients:

  • 1 cup uncooked quinoa
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, diced
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Rinse the quinoa and add it to a pot with 2 cups of water. Bring to a boil and then reduce to a simmer. Cook for 15-20 minutes or until the quinoa is tender and the water has been absorbed.
  2. While the quinoa is cooking, prepare the vegetables. Combine the black beans, diced bell peppers, and red onion in a large bowl.
  3. When the quinoa is done cooking, fluff it with a fork and add it to the bowl with the vegetables. Stir to combine.
  4. In a small bowl, whisk together the lime juice, olive oil, honey, cumin, salt, and black pepper. Pour this dressing over the quinoa and vegetables, and stir until everything is well coated.
  5. Stir in the chopped cilantro and diced avocado just before serving.
