- 1 cup uncooked quinoa
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small red onion, diced
- 1/4 cup chopped fresh cilantro
- 1 avocado, diced
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Rinse the quinoa and add it to a pot with 2 cups of water. Bring to a boil and then reduce to a simmer. Cook for 15-20 minutes or until the quinoa is tender and the water has been absorbed.
- While the quinoa is cooking, prepare the vegetables. Combine the black beans, diced bell peppers, and red onion in a large bowl.
- When the quinoa is done cooking, fluff it with a fork and add it to the bowl with the vegetables. Stir to combine.
