  • 6 cups chicken or pork broth

  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sake
  • 1-2 tbsp miso paste
  • 1/2 lb thinly sliced pork belly (or chicken or tofu)
  • 2-3 soft-boiled eggs
  • 1-2 cups mixed vegetables (such as bok choy, corn, bean sprouts, and scallions)
  • Salt and pepper


  1. In a large pot or Dutch oven, heat the garlic and ginger over medium heat until fragrant, about 1-2 minutes.
  2. Add the broth, soy sauce, mirin, and sake to the pot and bring to a simmer. Let the broth simmer for about 20-30 minutes to develop the flavors.

  6. Finish the ramen by adding a spoonful of miso paste to each bowl and stirring gently to combine.
