Healthy Meal Prep: One-Pan Chicken and Vegetables


If you’re trying to eat healthier or stick to a meal plan, meal prep is a great way to stay on track. This one-pan chicken and vegetable recipe is not only easy to make, but it’s also delicious and packed with nutrients.


  • 4 boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


  1. Preheat oven to 425°F.
  2. In a large bowl, combine chicken, peppers, zucchini, onion, garlic, olive oil, thyme, rosemary, salt, and black pepper. Toss to coat evenly.
  3. Transfer mixture to a large baking sheet, spreading it out in an even layer. Bake for 25-30 minutes or until chicken is cooked through and vegetables are tender.
  4. Divide into meal prep containers and refrigerate for up to 4 days. Serve with a side of brown rice or quinoa.
