Ingredients
- 4 boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 425°F.
- In a large bowl, combine chicken, peppers, zucchini, onion, garlic, olive oil, thyme, rosemary, salt, and black pepper. Toss to coat evenly.
- Transfer mixture to a large baking sheet, spreading it out in an even layer. Bake for 25-30 minutes or until chicken is cooked through and vegetables are tender.
- Divide into meal prep containers and refrigerate for up to 4 days. Serve with a side of brown rice or quinoa.
