Healthy and Delicious Quinoa Salad Recipe

  • 1 cup quinoa
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, chopped
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


  1. Cook the quinoa according to package instructions. Once cooked, transfer to a large bowl and let cool.
  2. Add the black beans, bell peppers, cherry tomatoes, red onion, and cilantro to the bowl with the quinoa. Toss to combine.
  3. In a small bowl, whisk together the olive oil, lime juice, cumin, salt, and black pepper. Pour the dressing over the salad and toss to coat.
