Ingredients
- 1 cup quinoa, rinsed and drained
- 2 cups water
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small red onion, diced
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh mint, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup extra-virgin olive oil
- 3 tablespoons fresh lemon juice
- 1 tablespoon honey
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions
- In a medium saucepan, bring the quinoa and water to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is tender and the water has been absorbed. Remove from heat and fluff with a fork.
- In a large bowl, combine the cooked quinoa, bell peppers, red onion, parsley, mint, and feta cheese. Toss to combine.
- In a small bowl, whisk together the olive oil, lemon juice, honey, garlic, salt, and pepper.
