  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, diced
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh mint, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • Salt and pepper, to taste


  1. In a medium saucepan, bring the quinoa and water to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is tender and the water has been absorbed. Remove from heat and fluff with a fork.
  2. In a large bowl, combine the cooked quinoa, bell peppers, red onion, parsley, mint, and feta cheese. Toss to combine.
  3. In a small bowl, whisk together the olive oil, lemon juice, honey, garlic, salt, and pepper.
  4. Pour the dressing over the quinoa salad and toss to coat. Season with additional salt and pepper, if needed.
