Delicious Mexican Street Corn Recipe

If you’re looking for a delicious and easy-to-make recipe to add some flavor to your next barbecue or summer party, look no further than Mexican street corn! Also known as elote, this popular street food is made by grilling corn on the cob until it’s charred and smoky, then slathering it with a creamy mixture of mayonnaise, sour cream, and cotija cheese. Spicy chili powder and fresh cilantro add the perfect finishing touch.

To make Mexican street corn, start by heating up your grill to medium-high heat. Meanwhile, mix together the mayonnaise, sour cream, cotija cheese, and chili powder in a bowl. When the grill is hot, place the corn on the grill and cook for 8-10 minutes, turning occasionally, until the corn is charred in spots and cooked through. Remove the corn from the grill and let it cool for a few minutes.

Once the corn is cool enough to handle, use a spoon to spread the mayonnaise mixture all over each ear of corn. Sprinkle with extra cotija cheese and chili powder, if desired, and top with fresh cilantro. Serve immediately and enjoy!
